Honey Mustard Roast Lamb
This recipe came from a friend of mine, it's a twist on an old family favourite of theirs and is always on the menu. Full of flavour and so simple, especially when you use the slow cooker method!
Honey Mustard Roast Lamb
Ingredients -
1.5kg Leg of Lamb
1T Fresh Mint, finely chopped
1 ½ T Wholegrain Mustard
2 T Honey
2-4 cloves Garlic, crushed
1 T Fresh Rosemary, finely chopped
Method -
Preheat oven to 200 degrees (180 Fan Forced)
Prepare your roasting dish
Combine the mint, mustard, honey, garlic, rosemary and cocominos into a paste. Rub the mixture over the lamb
Roast for 15mins then reduce the temperature to 180 degrees (160 degrees Fan Forced)
Roast for a further hour for medium or until cooked to your liking.
Remove the roast from the oven and stand covered for 15mins before carving.
*Alternatively (and my personal favourite way) Make the mixture, rub it on the lamb and pop it in the slow cooker for the day! DELICIOUS!
Serve with a selection of your favourite Roast Vegetables and Greens.
