Food For Life Tabbouleh
It's spring and I'm excited for all the fun BBQ afternoons that are coming! Nothing is better than a range of salads for a BBQ and this fresh and zesty version of Tabbouleh will not disappoint!
Ingredients
1 bunch Parsley
1 cup Mint leaves
1 Cup Cauliflower
2 Tomatoes, diced
1 red onion, diced
2 cloves garlic, crushed
1 lemon, Juiced
Pinch Salt
Method
Chop the cauliflower into chunks and then whizz in the blender to your desired ‘rice’ size. Blanch in hot water for a few minutes and strain. Allow to cool.
Dice Tomatoes and Onions.
Finely chop Parsley and mint.
Place all of the ingredients into a bowl and combine.
Serve and enjoy.
