Mango, Avocado & Macadamia Salad
This delicious salad will become one of your favourite Summer salad 'go to's'. It is simple, tasty and goes perfectly with any sort of protein or can be enjoyed on its own!
1 ripe mango, remove skin and seed, cube flesh
1 ripe avocado, sliced
Mixed salad leaves
1 cup macadamias, chopped
small cucumber, sliced
small carrot, sliced thinly
1/2 red onion, thinly sliced
Chilli, chopped finely
2 tsps wholegrain mustard
1 garlic, crushed
2 tablespoons olive oil
Prepare the salad ingredients. Place mixed salad leaves into a bowl, add the remaining prepares salad ingredients and toss lightly.
For the dressing, place into a jar and shake until combined, drizzle over salad
