Satay Chicken Skewers


1kg thigh chicken, cubed

2 Limes, juiced

Zest of 1 Lime

2 tablespoons Coconut Amino Sauce

2 tablespoons Red Boat Fish Sauce

4 cloves Garlic

Large knob Ginger

2 tablspoons Turmeric

2 tsp Coriander, ground

1 1/2 tsp Cumin

Pinch Seaweed Salt

Ground pepper

Coconut oil for baking

Place cubed chicken in a bowl. Combine remaining ingredients, apart from coconut oil, in a blender and combine. Pour marinade over chicken and stir through. Cover and leave for min 6 hours to marinade.

Soak wooden skewers to avoid the stick burning while cooking. Once chicken is marinaded place desired amount of chicken on each skewer. 

Place 1 tablespoon coconut oil on tray and place chicken skewers on tray. Bake for approx 45 minutes.

Peanut Satay Sauce

1 cup Organic Peanut Butter

1 knob Ginger, grated

Chilli to desired heat, finely chopped

3 tablespoon Coconut Amino Sauce

1/4 cup Maple syrup

1/4 cup Water

Pinch Seaweed Salt

Combine ingredients in saucepan and warm on stove, place in a bowl to serve

Serve Chicken skewers with satay sauce and salad.
