Tangy Lemon Tart



10 Medjool dates

1 cup Coconut

1 tbsp coconut flour


6 eggs

1 cup Lemon Juice

½ cup maple syrup

1 cup coconut cream

1T gelatin powder 


1 ½ cups coconut cream

¼ cup maple

1/2 Tablespoon gelatin powder



Base –

  1. Blend all the ingredients together
  2. Press into a lined cake tin

Lemon Curd –

  1. Combine eggs, lemon juice, maple syrup, gelatin and coconut cream
  2. Gently heat, stirring constantly, do not scramble.
  3. Stir until thick
  4. Strain over the base and set in the fridge

Topping –

  1. Warm coconut cream and maple syrup and gelatin
  2. Strain on to curd and set in fridge.
