Tangy Lemon Tart
Ingredients
BASE
10 Medjool dates
1 cup Coconut
1 tbsp coconut flour
LEMON CURD
6 eggs
1 cup Lemon Juice
½ cup maple syrup
1 cup coconut cream
TOPPING
1 ½ cups coconut cream
¼ cup maple
1/2 Tablespoon gelatin powder
Method
Base –
- Blend all the ingredients together
- Press into a lined cake tin
Lemon Curd –
- Combine eggs, lemon juice, maple syrup, gelatin and coconut cream
- Gently heat, stirring constantly, do not scramble.
- Stir until thick
- Strain over the base and set in the fridge
Topping –
- Warm coconut cream and maple syrup and gelatin
- Strain on to curd and set in fridge.
