MOIST ORANGE AND COCONUT CAKE
¾ cup maple syrup or honey
2 cups blanched almond flour
1 cup flaked coconut
½ teaspoon Changing Habits Seaweed Salt
1 teaspoon baking soda
Preheat oven to 180 and grease and line a 9-inch baking pan.
Wash the oranges and boil them whole (peel and all) for 1 ½ hours, or until soft.
Place whole oranges (peel and all) in a food processor and blend until smooth.
Add in remaining ingredients and processing until combined.
Pour batter into a greased 9-Inch round cake pan
Bake at 180 for 45-50 minutes, until a toothpick stuck in the centre comes out clean. Allow to cool.
