Healthy Rock Cakes

Who remembers the old fashioned Rock Cakes, just like Nan used to make? They were originally a traditional British teatime treat. Named after their look NOT their texture! Rock cakes are simpler and easier to make than scones but just as good with a lashing of butter and a cup of tea! Wonderful to have on hand for those afternoon drop ins!

 Ingredients

1/3 cup Coconut flour

1 cup shredded Coconut

1/3 cup GF Rolled Oats

1/3 cup Pepitas

1/3 cup Sunflower seeds

2 tbsp Chia seeds

½ cup Currents

2 tsp Bi-carb Soda

1/3 Sesame seeds

1/2 tsp Salt

3 tbsp Coconut oil

1/2 c Honey 

1/3 cup Tahini

3 Eggs

1 Vanilla pod, scraped

 Method

Preheat oven to 180 and line baking trays.

Combine coconut flour, shredded coconut, oats, pepitas, sunflower seeds, sesame seeds, chia seeds, bi-carb and salt in a blender. Combine until it resembles a crumb mixture, place into a bowl.

Add in the currants and mix through.

In a saucepan place tahini, honey and coconut oil - melt until smooth (do not boil just gentle heat to combine), remove from heat.

Add in eggs and whisk through the wet mixture. Place wet mix and vanilla into dry and combine well.

Place spoonfuls onto baking tray and bake approx 15-20 min.

Cool on a wire rack and enjoy!
