CARAMEL PEPITA COOKIES


Ingredients
1 1/2 Cups Pepitas

1/2 cup Coconut Sugar
1 Egg
1/2 tsp Bi-Carb soda
1 Vanilla Bean pod, scrap off the inside (dont place whole bean into mixture)
Organic Gems (gluten free etc)

Method
Preheat the oven to moderate 180 degrees, line a tray with baking paper.
Place pepitas, coconut sugar, bi-carb and vanilla process in the food processor until combine and mixture resembles crumbs.
Add in egg and mix until combine.
Place mixture into balls on the tray and flatten them out with a fork. Sprinkle the gems on top and bake for 25 minutes!
Great for school lunchboxes and of course you don't have to use gems, you could use home made jam and so forth
